Heat and cold in this fun tomato tartar. If you are tired of the typical salmon tartare, we propose this option in which the freshness of the tomato with the fiery Jalapeño Sauce from Doctor Salsas is sure to grab your attention.
- Doctor Salsas Jalapeño Sauce
- 2 large tomatoes
- 12g Dijon mustard
- 8g Worcestershire sauce
- Basil, chopped
Bring a pan of water to the boil. Make a shallow cut on the base of the tomatoes and boil them for 20-30 seconds. Remove them to a bowl with cold water and ice. Let them cool, remove the skin and seeds.
Cut the tomatoes into small cubes, add pepper and place the pieces in a colander so the excess liquid drains.
Mix the mustard, Worcestershire sauce, capers, chopped basil and EVOO in a bowl. Add Doctor Salsas Jalapeño Sauce and the tomato and stir gently to avoid crushing the cubes.
Keep covered in the fridge for 1 hour and serve with a few parmesan slices on top and… let’s get our hands dirty!
